Roasted Golden Cauliflower

Ingredients

  • 1 head of cauliflower washed and cut into florets
  • 2 tablespoons olive oil
  • 3 tablespoons tahini
  • 2 tablespoons raw honey or maple syrup
  • 1 teaspoon turmeric powder
  • A pinch of ground cinnamon optional
  • Salt to taste
  • A few pitted dates chopped
  • Scallions sliced
  • Cilantro chopped
  • 1/4 cup slivered almonds lightly toasted in a pan

Instructions

  • Preheat your oven to 400°F (200°C).
  • Toss the cauliflower florets with olive oil, tahini, honey (or maple syrup), turmeric powder, cinnamon (if using), and salt until evenly coated.
  • Spread the cauliflower in a single layer on a baking sheet lined with parchment paper. Roast for 25-30 minutes, turning halfway through, until the cauliflower is tender and crispy on the edges.
  • Remove from the oven and toss with chopped dates, sliced scallions, chopped cilantro, and toasted slivered almonds.
  • Serve warm, with additional fresh herbs if desired.
